When the Cat is Away …
… I will have collard greens with my dinner and a fresh baby spinach salad for lunch!
John is out of town for the rest of the week. His employer sent him to a conference in Omaha, Nebraska. Brrrrrr. I typically eat the same diet that he does (no Vitamin K, which pretty much means no green leafy things) because it’s easier to cook one meal with one set of side dishes than one meal with two sets of sides. But since he’s not here, I can enjoy my greens without too much work or guilt.
I feel a bit bad for him. His flight from Chicago to Omaha has been delayed by at least an hour. That’s pretty much SOP for Chicago (pretty sad, isn’t it, that you can safely assume that your flight will be delayed there?) but I do feel bad that he’ll be getting in later, which means a much later dinner. I guess I shouldn’t feel too bad though. While my stomach is digesting my SPAM and Cheese (that would be SPAM and macaroni & cheese), he’ll be feasting on prime rib sandwiches and micro brew beer.
